Chipas - Argentinian

Ingredients
  

  • 400 grams tapioca flour
  • 150 grams grated cheese
  • 150 grams hard cheese cut in pieces. (I used regular mozzarella).
  • 1 tsp salt
  • 1 tsp baking soda
  • 125 ml milk (regular or almond milk)
  • 3 eggs room temperature
  • 125 grams butter (room temperature, I used Kerry Gold)

Optional Ingredients

  • bacon bites, prosciutto, sesame seeds or any herbs

Instructions
 

  • •Preheat the oven to 375°F. •Combine the flour, baking powder and salt, stir.
  • Add hard cheeses, shredded cheese, (save 1/3 for later to add on top before baking).
  • Add the milk, the eggs and butter, continue to mix well onto all ingredients are incorporated.•Dough should start to form and feel between hard and soft. If the dough feels to hard to handle, add 1 or 2 tablespoon of milk…until it feels manageable.
  • Continue to mix as shown on the video, the dough should be lightly moist; and a little firm but manageable
  • •Form 1.5-inch balls and place them on a greased baking tray, leaving a couple of inches between them.
  • Add the extra cheese on top and press slightly down
  • Bake for 15-20 minutes or until the bunns are slightly browned.
