MARINATED CHICKEN NUGGETS
Ingredients
Ranch Dipping Sauce Ingredients
- Ranch Dip Sauce Ingredients:
- 1/3 cup mayonnaise
- 1/3 cup sour cream
- 1/3 cup Greek yogurt
- 1 teaspoon Dijon or yellow mustard
- 1/2 teaspoon dried dill
- 1/2 teaspoon dried parsley
- 1/2 teaspoon dried chives
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt & pepper to taste
- 1/4 monkfruit or 2 envelopes
- 1 tablespoon fresh lemon juice or just 1/2 of fresh lemon
Chicken Nuggets Ingredients
- 2 lbs Chicken thighs skinless
- 1 cup -Pickles water
- 1/2 tsp of each Seasoning of onion powder and garlic powder (make sure you use powder NOT garlic salt),smoked paprika
- 1 tbsp monkfruit sugar
- 1 tbsp tapioca four
- 1/2 cup heavy cream
- 1 large egg room temperature
- 1 bag of Pork rinds (flavored or unflavored)
- ***Use a flat baking dish and parchment paper.

Ranch Dipping Sauce Directions
- Using a medium size bowl, mix all the ingredients well. Let it sit for at least 20 minutes to allow the flavors to blend. You can save the cream sauce in a mason jar for up to 1 week. Enjoy!
- Chicken Nuggets Directions
- Pour the pickle juice in a sealable plastic bag and add the chicken.
- -Let it marinate for at least 2 hours or overnight
- -Add the entire bag of pork rind to a food processor and grind, transfer to a flat dish, and set aside.
- -Using a bowl,add the egg and whisk, then add the heavy cream and mix well, set aside.
- -Place chicken into the food processor (discard the liquid), grind the meat.
- Add all the seasoning, tapioca flour and sugar to the meat in the processor & mix one more time.
- -Remove the meat from the food processor and transfer into a bowl.
- Note: Prepare your table to start making your nuggets, in the following order:
- 1- meat,(scoop, shape)
- 2- mixed liquid( wet the nugget)
- 3- pork rind (bread the nugget)
- -Use a spoon or a small ice cream scoop to measure the meat, shape them as you please, dumb in the egg mixer and when remove make sure you leave the excess liquid behind and place on the pork rind on both side making sure to gently press down to coat the nuggets.
- Note: I baked my nuggets, at 350 for about 20-25 minutes, depending on your oven. You can air fry the nuggets if you know at what temperature/time. Or you can fry them using avocado oil.
